Meatloaf


It may not be the sexiest slab of meat, but it sure was delicious! Recently hubby's been talking about making a meat loaf, since we buy these massive 4lb packs of meat from BJs. This week I noticed that BJs had a premixed meat pack labeled for meatloaf. It's just several kinds of ground meat. I googled and found the following recipe from Real Mom Kitchen and was originally intended for meatloaf sandwiches. We may just do that with the left overs. 

Meatloaf Sandwiches

Ingredients
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced small
  • 2 tablespoons tomato paste
  • 1 1/2 pounds ground beef (10 percent fat) 
  • [My pack was 2 1/2 lbs]
  • 1 cup roughly crushed Ritz crackers (about 15 crackers) 
  • [I used a heaping cup of Italian bread crumbs instead]
  • 1 cup coarsely grated sharp cheddar (3 ounces)
  • 3 large eggs
  • 1 tablespoon plus 2 teaspoons prepared horseradish 
  • [Used  1tbl Spicy Brown mustard + 2 approx tsp horseradish - I was not aware I had any until after I used mustard]
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper

Directions:
  • Preheat oven to 375 degrees. 
  • In a small skillet, heat oil over medium; add onion and cook until softened, about 5 minutes. 
  • Add tomato paste and cook, stirring constantly, until brick-red in color and fragrant, 3 minutes.
  • In a large bowl, combine beef, onion mixture, crackers, cheese, eggs, horseradish, Worcestershire, salt, and pepper.
  • On a parchment-lined baking sheet, use your hands to form mixture into a 9-inch loaf. Bake until cooked through, about 40 minutes. Let rest 15 minutes before cutting into thick slices.
  • [Mine actually took 1 hour]

[Ooops!: This was a HUGE amount of meat. Nearly double what the recipe called for. I did not notice this until after cooking. Easily 6-8 meals worth of food. Next time I will use half the amount of meat].
