Some like it Hot



I've never made chicken wings. Ever. I'm not sure I had home made chicken wings growing up. But when I am in the right mood, I looooooooooove Chicken wings. Theres nothing like a good wing bar and a delicious variety or flavors. When these Spiced Chicken wings with Chipotle Lime Dipping Sauce popped up in my google reader feed I just knew I had to make them. This recipe hails from Life's Ambrosia, a blog that never fails to be absolutely delicious.

Ambrosia: In ancient Greek mythology, ambrosia (Greek: ἀμβροσία) is sometimes the food, sometimes the drink, of the Greek gods (or demigods), often depicted as conferring ageless immortality upon whoever consumes it. (Wikipedia). 

These chicken wings are covered in a combo of plain dry and panko bread crumbs and baked. This makes them a bit healthier then the fried ones - just a bit.  What really makes them superb is the dip. They come with a side of Chipotle Lime dipping sauce. This sauce packs quite a punch!

The only down side is that wings are somewhat difficulty to dip and horribly messy to eat. I'm thinking of repeating this recipe, sometime in the next week...with Chicken tenders. I imagine they'd be equally delicious.



Spiced Chicken Wings w. Chipotle Lime dipping Sauce
Life's Ambrosia

Ingredients

  • 1 1/2 pound chicken wings, cut at the joint and tips trimmed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1/2 cup panko bread crumbs
  • 1/2 cup plain dry bread crumbs
  • 1/2 cup mayonnaise
  • 3 chipotle peppers in adobo sauce
  • juice of 1 lime
  • 1 teaspoon vinegar
  • 1/2 teaspoon kosher salt

Directions

  1. Rinse and pat dry the chicken wings.
  2. In a bowl combine garlic powder, onion powder, cumin, chili powder, cayenne pepper, salt and olive oil in a bowl.
  3.  Sprinkle Mixture over the chicken wings and toss to coat completely. 
  4. Cover and refrigerate for at least 1 hour.
  5. After the wings have marinated, preheat oven to 400 degrees.
  6. Mix panko and plain dry bread crumbs in a bowl. 
  7. Press marinated wings into the bread crumbs to coat completely.
  8. Place on a baking sheet and bake 20 minutes. Turn and bake for 20 more minutes or until chicken is cooked through and bread crumbs are golden brown. 
  9. Transfer to a serving platter and serve.
  10. While chicken wings are baking, combine mayonnaise, chipotle peppers, lime juice, vinegar and kosher salt in a food processor. Process until smooth. 
  11. Transfer to a bowl. Serve.
