BBQ Pork from a crock pot!?

Can you still call it BBQ pork when it comes out of a crock pot? Regardless of what it's called,  It's pulled pork doused in some delicious BBQ sauce.....and it is mmm mmm good. This recipe comes from Budget Bytes and it totally rocks. It was easy to make and wonderfully delicious. The only problem I had was making the gravy - I failed at it miserably. 


Dinner this evening was deliciously southern. Rice (which was meant to be covered in gravy), sweet buttered corn, sauteed squash, zucchini and onion, and a large heaping pile of pulled pork covered in BBQ sauce. The corn was steamed in the microwave. This was my first time using Ziploc's "Zip n Steam" bags. They were easy, mess free and the corn came out spectacular! I'll be making more use of these in the future. As mentioned above the pork recipe comes from Budget Bytes. We covered in Sticky Finger's Carolina Sweet BBQ Sauce.

Budget Bytes places this pork recipe at  $8.34 and less than 1 dollar ($0.93) a serving. My husbands favorite part of this recipe: its PORK. My favorite part - it uses in the crock pot. I put in all of 10 minutes of effort, throw it in the crock pot and when I get back from school its DONE!

Crock Pot Pulled Pork
Budget Bytes

Ingredients:
  • 3.5lbs Boneless Pork Roast (Shoulder roast, Boston Butt, Picnic Roast)
  • 1 Med Yellow Onion
  • 1 Med Bell pepper
  • 5 Cloves Fresh garlic 
  • 2 Tbl Paprika
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Chili Powder
  • 2 Whole Bay Leaves
  • 1 Tsp Salt
Directions:
  1. If your roast has a net, remove it.
  2. Cut deep slits in the meat and push in peeled garlic cloves
  3. Mix paprika, garlic powder, chili powder, salt and pepper in a bowl. 
  4. Rub spices all over the outside of the roast - top & bottom.
  5. Place Roast in Ziploc bag. 
  6. Dice onion and Bell pepper. Add to bag.
  7. Let the roast sit over night in the fridge.
  8. Dump Contents in the crock pot. Add three Cups of Water.
  9. Heat on low - 8H
  10. Use tongs/fork/other to shred/mash the pork.
Note: Juice can be kept for gravy. Meat can be frozen.
