I've had these up on the blog before, (old recipe) but I've somewhat changed the recipe and made the best taco stuffed bell peppers I ever have. Plus, I've got nutrition and cost data and pictures! The Recipe is after the break as are more pictures.
First, This makes enough for 4 bell peppers (8 cups). I usually only make 4 cup (2 peppers) and use the left over meat mix for pasta or tacos. I'd estimate thats its a minimal of 4 servings, but it could be 8, depending on who you are feeding. .
Cost Info: Making the whole recipe yields 4 servings and cost $9.80, thats $2.45 a person. (this does not include cheese or sour cream). It leaves you with a 3/4 onion.
Additional Ideas: Now if your cooking for a couple, like I am. I make it stretch a little further, I used half the sauce in two peppers (as peppers are one of the more expensive ingredients) and then I use the sauce and throw it on top of a half box of Barrelli plus pasta (2.35/box) or on top of some flour tortillas. Throwing it on the pasta is close to 4 more servings, as the pasta is packed with protein and fiber and fills you up quickly.

Ingredients:
- 1 lb Ground Beef
- 1/4 Chopped Onion (used up to 1/2 on taste preference)
- 1 Package Taco seasoning mix
- Mushrooms (1 Can or Fresh sauteed, amount to taste)
- 2 Bell Peppers (Recipe makes enough for 4-6). Cut in Half.
- 1 can Rotel (or diced tomatoes w. green chilis)
- Shredded Cheddar/Mexican/Taco Cheese
- Hot Sauce (optional)
- Sour Cream (optional)
- Tortilla Chips, crushed (optional)
Directions:
1. Brown beef.
2. Add Mushrooms and onions and Taco Seasoning, following directions on packet.
3. Dump in can of Rotel. Continue simmering for 5-10 minutes.
4. While Beef mixture is cooking, Cook Bell Peppers in boiling water for 5 - 10 minutes (until soft).
5. Spoon Beef mixture into Bell pepper.
6. Cover with Cheese
7. Baked 350 for 20 minutes
