I branched out a few years ago, and discovered quite the dish....Taco Stuffed Bell Peppers. I wish I had the original recipe, in order to give my inspiration credit, but over the past year, I've morphed the recipe into one of my own, and it is always delicious. This recipe makes a lot of "stuffing". I usually only make 2 Peppers (4 halves), then use the "stuffing" for a taco pasta type dish. Its easy and surprisingly delicious.
Ingredients:
- 1 lb Ground Beef
- 1/4 Chopped Onion (used up to 1/2 on taste preference)
- 1 Package Taco seasoning mix
- Mushrooms (1 Can or Fresh sauteed, amount to taste)
- 2 Bell Peppers (Recipe makes enough for 4-6). Cut in Half.
- 1 Jar Chunky Salsa
- Shredded Cheddar/Mexican/Taco Cheese
- Hot Sauce (optional)
- Sour Cream (optional)
- Tortilla Chips, crushed (optional)
Directions:
1. Brown beef. (How to make it healthier by rinsing).
2. Add Mushrooms and onions and Taco Seasoning, following directions on packet.
3. Dump in can of chunky salsa. Continue simmering for 5-10 minutes.
4. While Beef mixture is cooking, Cook Bell Peppers in boiling water for 5 - 10 minutes (until soft).
5. Spoon Beef mixture into Bell pepper.
6. Drop on some hot sauce (optional)
7. Cover with crushed tortilla chips (optional)
8. Cover with Cheese
9. Baked 350 for 20 minutes
10. Serve with side of salsa or sour cream
