
Yesterday I went through somewhat of a cooking frenzy. We were having people over for the game, but more importantly I really wanted to avoid studying for my test, and I always love bulk cooking/preparation. I really enjoy cooking and baking, but often (and I'm sure most people get this) I don't have the time to prep, so I end up making some thing that are just edible.
While grocery shoping for yesterday, I ran across a pack of oreos and decided it was time I make oreo truffles. I spotted the recipe on bakerella a while ago, and I have always wanted it. So I made football shapped oreo truffles for dessert. They were a big hit.

For a Future meal, I went ahead and made imitation Chili's southwest egg rolls. I substituted real egg roll wrappers for the tortilla. They are frozen. I'll probably fry some up tonight, or later this week. I'll post more on that when I actually eat them.
{update 11/13: Froze them, cooked them earlier this week in my mini fry daddy. Could but they were a little burnt by the time they defrosted. In the future, I'll defrost first. Or fry then bake...}
For the football game, I made sausage salsa dip. Incredible easy, and always delicious. 2 rolls of Jimmy Dean spicy breakfast sausage, 2 cans of salsa, and 2 8oz blocks of cream cheese. Cook the Sausage, dump in the salsa, and blend in the cheese then refrigerate. Always a crowd pleaser.
For dinner, Chicken wraps. Chicken stuffed with cream cheese and jalepenos, wrapped in bacon. Easy and delicious again. So simple, yet the people I make it for always thinks its fantastic. To make
1. marinate chicken breast in italian dressing (2 hr - overnight).
2. Lay the chicken breast flat, cut a slit down the center
3. fill/overfill with cream cheese (one block = 6 - 8 breast)
4. Add jalepenos. Minced are best, but slices work.
5. Roll up chicken
6. Wrap with 1 - 2 pieces of bacon
7. Poke two tooth picks through
8. Bake 30-45 min @ 350 (or grill)
