Taco Pasta



For Dinner I made my own Taco pasta. It was inspired by a taco stuffed pasta shells recipe I discovered a few years ago. Heavily modified, based on whats available. This recipe is delicious, fairly cheap and makes alot. I divided it into two 8X8 pans. Froze one. An 8X8 pan serves 2, plus at least enough for one left over lunch.

Modifications I used are as follows:

- I used whatever pasta I have available, even though it can't be stuffed. Tonight I used bow-tie. (Since it can't be stuffed I mix all the meat/salsa/pasta together before putting in a pan.
- Mushrooms instead of beans. I'm really not into beans.
- Ground turkey: much healthier
- Lots of hot sauce
- Can of crushed tomatoes with chili. Thickens up the sauce and provides some spice.

Being the lazy chick I am, I used the salad bag mix again: Mediterranean Supreme. Always delicious, and always easy.
